A yummy Pear Cake Recipe!

I am excited to catch up on writing tonight 🙂

Here is an AMAZING recipe from a sweet friend that we got to taste from her during our trip with them to Sea World several months back…I couldn’t wait to try it at home. (My husband said it was the best cake I’ve ever made—thank-you Laura!!!)

Laura Fallot’s Yummy Pear Cake:

Set the Oven to 350 degrees:

Ingredients:

4 ripe bartlett pears (3 cups) Peeled and diced

1 tablespoon white sugar

3 large eggs

2 cups white sugar (used second in the recipe)

1 1/4 cup vegetable oil

3 cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 1/2 cup chopped pecans

2 teaspoons vanilla extract

*Toss together pears and 1 tablespoon sugar. Let stand 5 minutes. Beat eggs, 2 cups sugar and oil until blended. Combine flour, salt, baking soda.  Add to egg mix until blended.  Fold in pears, pecans, and vanilla.  Pour into a greased and floured Bundt pan.  Bake for 1 hour or until a toothpick comes out clean.  Remove from pan and drizzle warm cake with caramel glaze.

Caramel Glaze:

1 cup brown sugar

1/2 cup butter

1/4 cup evaporated milk

*Stir together over medium heat, stirring constantly, boil for 2 1/2-3 minutes.
